Yogurt Cheese

You will Need:
~ 1 quart unflavoured, whole fat yogurt
~ Cheesecloth
~ Strainer
~ Large bowl
~ Small bowl

Directions:
* Place small bowl upside down in bottom of large bowl. Place strainer on top of small bowl
* Line strainer with 3-4 layers of cheesecloth. Spoon yogurt into strainer. Place bowl in fridge overnight.
* Liquid whey has separated from the yogurt and run into the bottom of the bowl leaving behind cheese.
* Gather cheese from the top, enclosing the ball of cheese. Twist the top and gently squeeze cloth from top to bottom. Transfer cheese to mixing bowl.
* For savory cheese add 2 tbsp. basil ad 1 tsp of salt to cheese.
* For fruity cheese add 1.2 c blackberries and/or honey
* Mix ingredients with a fork. Cover and return to fridge
* Gather in ball. Slice in half and serve flat side down on plate.
