Nanaimo Bars with Pansies



Ingredients:
* 1 c. soft butter
* 1/2 c. sugar
* 10 tbsp. cocoa powder
* 2 farm eggs
* 3 1/2 c. graham crackers
* 2 c. coconut

* 1 c. soft butter
* 6 tbsp whipping cream
* 4 tbsp. custard powder
* 4 c. confectioners sugar


* 8 (1 ounce) chocolate squares
* 4 tsp. butter (sometimes more)
* Crystallized flowers

Directions:
1) In top of a double boiler, with first batch of ingredients:
~ Combine butter, sugar and cocoa powder
~ Stir till smooth
~ beat in eggs. Stir till thick
~ Remove from heat
~ Add crackers and coconut
~ Press into pan (lasagna size)

2) Using second batch of ingredients
~ Cream butter, cream, custard till light and fluffy
~ Mix in confectioners sugar till smooth
~ Spread over bottom layer
~ Chill till set

3) Using last batch of ingredients:
~ Melt chocolate slowly in small pot with the butter
~ Spread quickly over chilled bars
~ Once partially set add flowers
~ Chill till set

** These are amazing!! Taste so good! Remember to spread a fine layer of chocolate, if it's too thick it will be harder to bite into**
